Marinades

When it comes to food, I never expect to get it perfect the first time and always, always think about how to improve. I am now famous amongst my family and friends for my attempts to deconstruct the food I make and eat. I love to try numerous recipes for the same thing and see which I like the best. Here are the two marinades I've decided I love and work perfectly for meaty fish and chicken. I don't eat meat, but my brother won't eat fish, so when I do a protein and salad meal; I do fish for me (usually tuna) and chicken him.

1) Light and Fresh: an adaption from Jamie Oliver's Italian book
Advantages: tart and tasty
Disadvantages: Fresh herbs can make this expensive if you don't have them in your garden like I do.

Ingredients (for 4):

2 tbsp olive oil
3 cloves of garlic
1/2 juice of a lemon (I have used 1 lime to similarly lovely effect)
10 mint leaves
1 sprig / small handful Oregano

Chop everything up and add the fish/meat.

2) Rich and flavourful
Advantages: TASTY! This is the first time my brother has liked any fish I have prepared. Also, I used this marinade as the base for a salad dressing and it worked well.
Disadvantages: Not the best if you're cutting down on your salt and sugar (like my father is supposed to)

Ingredients (for 4):

3 tbsp olive oil
Juice of 1 lime
3 tbsp soya sauce
3 tbsp brown sugar - I've achieved a great result with demaraira sugar
3 cloves garlic
Ginger - the size of 2 garlic cloves - I've made this without the ginger and it still works really well

Chop everything up and add the fish/meat.

If there's some marinade left you can either use it to make a sauce (gently heat first) or to make a salad dressing: for this I made a salad of cucumber, tomatoes and lettuce and added 1 tbsp white wine vinegar to the marinade mixture. I also sprinkled some sesame seeds on the top.
