Before we go I would like to stress that I often make this with whatever amounts of basil or pistachios I have and routinely mess with the ratios. Below are the measures I used when I made the pesto today.
Ingredients:
This makes enough for 4/5 people to have a pasta with pesto meal.
75g bunch of Basil - I had 42g once I had picked all the leaves
100g pistachios
Juice and zest of one lemon - I had 75g of juice (which may be too much lemon for some)
25g parmesan cheese (omit for the vegan version)
100ml olive oil
2 cloves of garlic
Pinch of salt to taste
1) I used a pestle and mortar because I like to take my aggression out and I like the rough texture, but you can use a blender no problem. Pound/blend the picked basil leaves and pistachios. If you're having problems with the blender add the olive oil slowly while you blend.
2) Add the lemon zest and half the juice. Taste. If you like the lemon flavour move on, otherwise add the rest of the juice.
3) Crush the garlic and grate the cheese and add to the mixture.
4) Add the olive oil and salt.
5) Taste.
6) Add more oil/cheese/salt for taste and/or texture.
